Research that integrates a
fundamental understanding of cheese science and technology with archival
studies of cheese history and anthropology is aimed at reconstructing the
European origins of diverse cheeses. The goal is to understand the reasons
why specific cheese varieties originated in specific geographical regions
of Europe in the distant past, and to explore the influence of cheese
history on current European attitudes towards cheese and food in general.
